Recipe: Cheese Scones #AddApplewood

With The Great British Bake Off gracing our screens with its delicious presence again as of last week I thought it was probably about time I did some baking with Athena. It’s something I have put off up till now because whatever she’s doing Arlo wants to get involved which just wouldn’t go well. However today I plonked Arlo down in his highchair with a large banana and some cheese to nibble whilst he watched us and we got stuck in! Applewood Cheese had sent us some colourful new bakeware and a delicious selection of cheese and a challenge to #AddApplewood and make something delicious! I’ve not made scones in absolutely ages, and normally make the type you’d slather with jam and cream so decided to go for a savoury option this time! I stuck a pinny on my little helper, scraped her hair into a bun and let her loose with the ingredients… Scones are a great thing to make with kids as the mixing is all done by hand and it doesn’t really matter too much if the dough is kneaded to death before it gets cooked!

Here’s the recipe:

  • 225g self-raising flour
  • 55g butter, cut into small cubes
  • 1 level teaspoon baking powder
  • 80g grated Applewood smoked cheese plus a handful for sprinkling
  • 1/2 teaspoon dry mustard
  • ½ tsp salt
  • 150 ml (¼ pint) milk
  • 1 egg beaten with a little milk

Method:

  • Lay some baking paper on a large baking tray & heat your oven: 200C/400 F/Gas 6
  • Sieve the self-raising flour into a large bowl, add the butter, salt & baking powder. Rub until the mixture looks and feels a bit like breadcrumbs
  • Mix in the finely grated cheese mustard powder
  • Make a hole in the centre of the mixture and stir in half the milk and mix to form a soft dough, add more splash by splash but don’t let it get too sticky!
  • Turn your dough onto a floured work surface and knead gently, then lightly roll out to around 2cm in thickness
  • Use a serrated cutter to cut into circles (we used 2.5 inches and a few smaller ones to use up all the dough
  • Place on the baking tray and brush with the beaten egg and milk mixture. Sprinkle with grated cheese then bake near the top of the hot oven for 15 minutes or until golden brown and well risen.

So how was baking with a three year old? Absolute chaos but really fun! She had a blast, and I even let Arlo get in on the action with a little bit of dough. To be honest though he was happy to eat as much cheese as he could get his hands on! Thankfully both my kids are cheese fiends, they’d eat it all day every day given half the chance so nibbling on slices of Applewood Smoked Cheddar went down well with Arlo and it kept him happy whilst his sister rolled the dough and attempted to cut out neat scones ready to go into the oven! They wouldn’t win any prizes for appearance but they were so delicious warm out of the oven with lots of butter, the smoked cheese flavouring each scone perfectly! Next on our list to bake is Cheese Straws and Cheesy muffins, as i’m hoping to hide some veg in there for the kids!
