Breakfast that you don’t have to make when you’re bleary eyed is always a winner, so overnight oats are the perfect solution providing you remember to prepare them the night before! I know that a couple of years ago overnight oats were the in thing but I didn’t really get into them until my husband was on a health kick last year and would prepare them to take to work with him to stop him scoffing a cooked breakfast at work! Admittedly his were made up in tupperware and didn’t look as photogenic but he loves pecans so I got experimenting with other ingredients that the whole family would eat! So for my fourth breakfast for Arla’s Choose Goodness challenge can I present Peach & Pecan overnight oats!
Peach & Pecan overnight oats
ingredients: (2 servings)
16 tablespoons (or 1 cup) of rolled oats
300ml Lactofree Milk
½ teaspoon of nutmeg
½ teaspoon of cinnamon
Handful of roughly chopped pecans (keep some aside for the morning)
½ a peach sliced or chopped (I used tinned as they’re more juicy)
2 tablespoons of maple syrup (keep one aside for the morning)
Method: Find a kilner jar or similar and pop the oats in the bottom, add the milk and give it a quick stir. Top with the peach slices, pecan nuts, spices and one tablespoon of maple syrup and pop in the fridge overnight with the lid on. In the morning add sprinkling of pecans for some crunch and another tablespoon of syrup.
You can replace the maple syrup for natural honey, or fruit syrup works well too. Other ideas if peach isn’t to your liking you could use any fruit, pineapple works well with desiccated coconut sprinkled on top! I’ve also tried a distinctly sweeter recipe with nutella and peanut butter!
