As we’re told from a young age Breakfast is the most important meal of the day, unfortunately it is the meal I have the least energy to prepare. I’m working with Arla to put together seven easy breakfast recipes to try and revive our mornings with things that are fun and different from the normal cereal or toast that I’ve come to rely on! It’s been so much fun experimenting with all their products and getting the kids involved in helping me with the recipes too! The reason behind this new Choose Goodness campaign from Arla is as the worlds fifth largest dairy producer they are fighting food challenges and helping everyone to make healthier food choices. I’m really please to have been asked to become an Arla Ambassador as never before have I been more aware of my own eating habits and diet, but also those of my children.

Arla, a farmer owned dairy, producse a wide range of dairy product; from Skyr yoghurt to cottage cheese, and over the course of this week I’ll be sharing a recipe each morning that you can prepare in under six minutes (apart from a special Sunday brunch recipe which will take a little longer!)
Yoghurt & Granola Parfait
A perfect easy to make breakfast that is ideal for Monday mornings when you’re still bleary eyed and need things to be a simple as possible! Skyr yoghurt is just perfect for this as it is thick and creamy so the granola stays crunchier for longer!
Ingredients: (makes 2 servings)
1/4 cup granola
1/2 cup Skyr Plain Yoghurt
1 tablespoon maple syrup
Method:
Place the granola in the bottom of a glass or ramekin. Spoon the yoghurt on top. Drizzle with maple syrup and enjoy!
Ways to adapt the recipe:
- Use flavoured Skyr yoghurt
- Add a handful of raisins
- Sprinkle some cinnamon on top
- Forgo the maple syrup for a healthier option, or try natural honey
