Recipes: Retro Treats – Milkshake & Cookies

A couple of weeks ago I was sent a lovely parcel from Creative Tops with some items from their Retro Treats range, a 50’s inspired range of dessert-type goodies! Think American diner and you’ll not be far off! I have been happily making good use of them since they arrived and today I am sharing two simple recipes, Peanut Cookies and Chai Cookie milkshake.

Chai Cookie Milkshake

  • 1.5 Pints of milk
  • 6 teaspoons of chai powder
  • 2 scoops of cookies n cream ice cream (or mint choc chip also works brilliantly)
  • a few cookies

Find a big bowl and a whisk (or use a mixer if you have one). Warm half a pint of milk in the microwave, then stir in the chai powder till dissolved. Next fling it and the cold milk and ice cream into the bowl, turn on the mixer and zap for around 20 seconds. Pour into your sundae tumbler, crumble some cookie on top, drink it! So simple but really tasty!

To attempt to stop myself from spending what little maternity pay I have left on cake when I am out I have been baking at home more and having a delightfully pretty tin full of home baked goodies in the house is making me happy (and plump!) My current favourite thing to make are peanut cookies which are actually healthier than you’d think. They are based on the Lorraine Pascal recipe from her book ‘A lighter way to bake’

 

Peanut Cookies
You Need:

  • 50g oats (I use porridge oats)
  • 50g wholemeal flour
  • 50g caster sugar
  • 175g crunchy peanut butter
  • 1 egg
  • 1tsp vanilla extract
Preheat oven to 190c. Beat the peanut butter & sugar together till mixed, add in the egg, the vanilla extract and 1 tablespoon of cold water and when it looks combined add the flour and oats (I don’t bother to sieve the flour). Now get your hands stuck in and make a soft dough. This should make 12 balls, pop them onto a tray lined with grease proof paper and flatten them to about the thickness of a pound coin. They won’t spread when baking so you should get them all on the same tray. Bake for 12 minutes and they should go golden on top but remain a little soft, they’ll firm up when they cool. Enjoy 1 or 2 and then store the rest in a pretty tin! The two tins from the Retro Treats range are sturdy and fit inside each other for easy storage!
I was also sent this Bon Bon Jar, but I’m keeping cotton wool balls in it in the bedroom because it’s too pretty for the kitchen! One day soon I’ll do a it of a bedroom tour and feature it then!
